Herbs enhance the foods we eat, capturing the lure of uplifting fragrances and the hint of romance. They give us an appreciation of subtle foliage, flowers, and flavors. Although the vitamins and minerals herbs provide may be minute in quantity, it is the taste, mood-enhancement and health benefits they give foods that make them so valuable.

Ginger Pumpkin Cheesecake

Ginger Pumpkin Cheesecake
CRUST
1 - 1/4 cups ginger snap cookie crumbs
1/2 cup finely chopped pecans
1/4 cup brown sugar
1/4 cup sugar
1/4 cup butter (unsalted), melted

Spray a 9" to 10" spring form pan with a butter-flavored vegetable oil (e.g. PAM). Combine all ingredients in a large bowl and mix well. Pat this mixture into the prepared pan. Set aside.

FILLING
24 ounces cream cheese, softened
1 cup plus 2 tablespoon sugar

1 - 1/2 teaspoons cinnamon

1 teaspoon ground ginger
1/2 teaspoon
1 tablespoon flour
1 cup canned pumpkin
3 eggs
2 tablespoons evaporated milk or whipping cream
1/2 teaspoon vanilla

Preheat oven to 300 degrees.

Using an electric mixer, beat the cream cheese and the sugar, cinnamon, ginger, salt, and four, until smooth. Add pumpkin, eggs, evaporated milk, and vanilla. Mix until no traces of pumpkin remain. Pour filling mixture into prepared spring form pan, and bake 1 hour. The center will be soft. Turn off oven and let cake cool with door closed for several hours or overnight. Refrigerate cheesecake. May be served with whipped cream, a lemon verbena sprig and thin twist of lemon.

Four fresh sprigs of spearmint
2 tablespoons of sugar (or substitute your favorite sweetener)
Fresh Lime
Sparking Water or Tonic Water
Ice
Bacardi Light Rum or Rum of your Choice

In a large glass put sprigs of mint, along with sweetener. Use a wooden spoon to grind the leaves. Squeeze juice of one-half fresh lime or whole key lime. Add ice to the top of the glass. Pour in one third Rum and fill the rest with Tonic Water or Sparkling Water of choice. Stir well. Garnish with a wedge of lime and mint. Sit back and relax in your garden!
