Herbs enhance the foods we eat, capturing the lure of uplifting fragrances and the hint of romance. They give us an appreciation of subtle foliage, flowers, and flavors. Although the vitamins and minerals herbs provide may be minute in quantity, it is the taste, mood-enhancement and health benefits they give foods that make them so valuable.

Lemongrass & Potato Soup

2 tablespoons of fresh lemongrass
1 pound new potatoes sliced
1/2 cup fresh cilantro
2 tablespoons fresh minced garlic
4 cups chicken or vegetable stock
1 leek minced
2 teaspoons olive oil
2 teaspoons fresh garlic chives
a dash of Cayenne pepper

In a large soup pot over medium heat pour in the olive oil. When warm, add the lemongrass, leek and garlic and sautee until tender. About 2 to 3 minutes. Do not let burn. Add the stock and potatoes and bring to a boil. Then reduce the heat to a simmer, cover and let simmer until the potatoes are tender. About 15 minutes. Remove from the heat and add the cilantro. To serve, pour into soup bowls and add the garlic chives on top and a dash of Cayenne.

Dandelion & Bacon Salad

8 oz. Young Dandelion leaves
4 oz. Sliced cooked bacon
1 slice of white bread cubed
4 tablespoons olive oil
1 tablespoon FHF Lavender Champagne Vinegar
1 clove of garlic crushed
salt and pepper to taste

Wash and dry the leaves and tear them into a salad bowl. Make a vinaigrette using the olive oil and vinegar, and season to taste. Fry the bacon, then dice and add the bread crumbs and crushed garlic. Pour the contents of the pan over the Dandelion leaves and add the oil and vinaigrette, toss and serve at once.
